We've been receiving a lot of emails from our CSA members detailing how they prepare their produce each week. We thought it would be great if members could read about other members' cooking ideas. Feel free to comment on this post with your favorite recipes, ideas, etc.

I used the peas and spring onions to make a risotto last week and I've been experimenting with cherry recipes. I made this one last week and I was thinking of trying this cherry soup recipe tonight.
Wow, that stewed cherry recipe sounds awesome! I'm using the beets to make beet kvass, though I don't peel them, I just scrub them really well. The result is wonderful: earthy, beety, and salty, and gets more so as it sits in the fridge.
I used the yellow, black and red raspberries, as well as blueberries, to make a fruit tart (like the ones at Whole Foods with strawberries, kiwi, berries). It was fantastic--probably used a pint and a half total of berries. Super yummy and my 4 y.o. kept asking for more.

I marinated yellow squash and some red onion slivers with olive oil, garlic powder, parsley, and pepper and salt for 20 minutes. I then cooked them on an indoor over-burner grill.
I also used the blueberries to make this recipe. The cake was delicious and pretty easy. The other ingredients are things you might typically find around the kitchen too.
These recipes all sounds really great! Thanks for sharing them!

Here are a couple of things I've made from your delicious produce:
Tomatillo salad dressing (I mixed mine with some homemade ranch dressing): http://www.baileyfarmsinc.com/recipes.asp?PRODUCT=55&RECIPE=27
Ratatouille in the slow cooker with eggplant, squash, tomatoes, onions, etc. Very tasty.
Cucumber, Mango, and Shrimp salad:

Though I'm not a big beet fan, I found this recipe that looked palatable and fun: http://weelicious.com/2009/06/08/red-beet-white-bean-hummus/
And I haven't had the chance to make anything from your fruit, because we eat them too fast!
Thanks to you all!
Thanks so much for the great recipes and your awesome comments! :-)
Sincerely,
OCP (Virginia Keckler) :-)
